"Lemon Bars"

These "Lemon Bars" are amazingly smooth and rich. A crisp crust, firm filling, and sweetly-sprinkled top make these Lemon Squares the highlight of easter dinner.


Lemon Bars Recipe

Crust Ingredients
1 Cup Butter
1/2 Cup Powdered Sugar
2 Cups Flour
2 Tbsp Corn Syrup
1/4 tsp Salt

Crust Directions
Pre-heat oven to 350 degrees fahrenheit.
Grease and four a 9 x 13 inch pan.
Pat crust batter into a thin layer that spreads across the bottom
of the pan. (This amount of batter will be just enough to cover
the bottom.)
Sprinkle a light coat of granulated sugar on the crust batter
before baking.
Bake crust at 350 degrees fahrenheit for 15-20 minutes until
lightly browned.

Filling Ingredients

2 1/2 Cups Sugar
4 Eggs
3/4 tsp Baking Powder
1/2 Cup All Purpose Flour
1/2 Cup Fresh Lemon Juice (or Lemon Concentrate)
1 Lemon Rind Grated
(Use a fine grater and remove just the
outer layer of a one lemon rind. Add this to the mixture.)


Filling Directions
Combine all of the filling ingredients in a mixing bowl. Beat
thoroughly until all contents are a smooth consistency. Pour
mixture onto crust as soon as it comes out of the oven. Return
the pan to the oven and bake for 20 minutes at 350 degrees
fahrenheit.



Topping Ingredients
1/4 Cup Graham Crackers (finely crushed)
1/4 Cup Powdered Sugar


Topping Directions
Mix crushed graham crackers and powdered sugar togehter in a
small bowl. When filling is done baking, sprinkle the entire
topping mix on top of the lemon squares. Allow to cool. Cut into
squares. Chill squares in refrigerator for 30-60 minutes. Serve.

Note to kids: Only try cooking with your parents' permission. Get your parents to help if you can!
