"Curry Chicken and Rice"

This Curry Chicken and Rice will bring your family running to the dinner table. It is surprisingly simple to make and yet full of flavor and pizzazz. Once you try this recipe, you will want to make it all the time.

Serves 4


Curry Chicken and Rice Recipe

You will need:
4 Chicken Breasts (boneless and skinless: about 2 pounds total)
Long Grain Rice

Tip: Get the chicken and rice started first, as they take the longest to cook.

Chicken Recipe

4 Chicken Breasts (boneless and skinless: about 2 pounds total)
Pinch of Curry Powder
Pinch of Black Pepper
Pinch of Garlic Powder
Pinch of Paprika



Directions for Chicken

Pre-heat oven to 400 degrees fahrenheit.

Place 4 chicken breasts on a cookie sheet.

Spritz chicken with cooking spray.

Shake a light coat of curry powder onto chicken.

Shake black pepper, garlic powder, and paprika on chicken as desired.

Bake chicken uncovered at 400 degrees Fahrenheit for approximately
45 minutes.


Rice Recipe

1 Cup Rice
2 Cups Chicken Broth


Directions for Preparing Rice

Pour 1 Cup of rice and two cups of chicken broth into a saucepan.

Bring to rolling boil on high heat. When rolling boil is established,
immediately reduce heat to low. Allow boil to subside and cover.

Simmer covered for 15 minutes.

Check rice. If excess liquid remains after 15 minutes, heat uncovered
for 3 minutes.

If excess liquid remains after 3 minutes, drain excess in a strainer.


Curry Sauce - makes about 1 1/2 cups of curry sauce

3/4 Cup Chicken Broth
1 Cup Heavy Cream (heavy whipping cream)
1/4 Cup Flour
3 Tbsp Butter or Margarine
1/2 Tbsp Onion Powder
1/2 Tbsp Parsley (Chopped)
2 tsp Curry Powder
1/2 tsp Black Pepper
1/2 tsp Salt
1/4 tsp Celery Seed
1/4 tsp Coriander
1/4 tsp Cumin
1/4 tsp Dill Weed
Pinch of Cayenne Pepper



Directions for Curry Sauce

Add all contents except cream into a saucepan.

Heat on medium heat until a soft boil is established stirring
continuously.

Reduce heat to low.

Add cream and stir vigorously during simmering for 5 minutes.



Serving

Place a large scoop of rice on a plate with a serving spoon.

Place one chicken breast on top of the rice.

Pour curry sauce over chicken and rice to taste.
