Family Fun Shop Recipes : Dinner Main Course
"Filet Mignon and Spud Rounds"

Here is the ultimate for the meat and potatoes kind of person. A
broiled filet mignon with bacon wrap and an original fried mashed
potato make this an absolute delicacy.

Don't be afraid to try this elegant meal. The directions in this recipe make it easy and fun.

Serves 5


Filet Mignon and Spud Rounds Recipe

You will need:
2 1/2 pound of filet mignon (5 cuts of filet mignon).
Bacon strips.
Fresh chives

Filet Mignon Recipe

2 1/2 pounds of filet mignon (5 cuts)
1/2 Cup Olive Oil
Pinch of Rosemary Leaves
Pinch of Garlic
Pinch of Black Pepper


Directions for Filet Mignon

Follow these directions for each individual serving of filet
mignon:

Coat top and bottom of filet mignon with olive oil.

Coat inside of frying pan with olive oil.

Sear filet mignon in frying pan on high heat for one minute on each
side.

Remove filet mignon from heat.

Wrap filet mignon with a bacon strip on the side only.

Place filet mignon on a cookie sheet and sprinkle the following to
your preference:
-rosemary leaves
-garlic powder
-black pepper

Place oven rack so filet mignon can broil at 8 inches from heat
source.

Place cookie sheet with filet mignon in oven and broil to desired
doneness. Although cooking time will vary in different ovens, an
approximate time for doneness is as follows:
8 minutes per side = rare
9 minutes per side = medium
10 minutes per side = medium well
11 minutes per side = well

-When one side of the filet mignon has finished broiling,
remove from oven, flip filet mignon over, and add rosemary, garlic
powder, and black pepper as done above.

Return filet mignon to oven and broil the second side of filet mignon.


Spud Rounds

7 Large Potatoes
1 1/2 Cup Sharp Cheddar Cheese (grated)
3/4 Cup Sour Cream
1/2 Cup Butter
1/2 Cup Heavy Cream

2 tsp Salt
1/4 tsp Onion Powder
1/4 Cup fresh chives (diced)
2 Cups All Purpose Flour
4 Eggs
4 Cups Bread Crumbs



Directions for Spud Rounds

Dice 1/4 cup of fresh chives and set aside

Peel 7 large potatoes.

Boil potatoes until soft (about 35 minutes).

Add potatoes and all BOLD ingredients EXCEPT chives in a mixing
bowl.

Mix potatoes and added ingredients with a power mixer at medium
speed until clump free (about 5 minutes).Add chives when mixing is
done and stir them gently into potatoes.

Prepare 3 medium sized bowls as follows:
- Bowl 1 = 2 Cups All Purpose Flour
- Bowl 2 = 4 Eggs (mixed)
- Bowl 3 = 4 Cups Bread Crumbs

Make potato balls from the mashed potato mixture.

Roll potato balls in flour.

Roll potato balls in eggs.

Roll potato balls in bread crumbs.

Deep fry potato balls in vegetable oil on medium temperature.


* Be sure to dip the potato balls in all three bowls or your oil may boil over. The flour and egg help to prevent this from happening by sealing in the water in the food.


Preparation and Serving Directions

Preparation
Prepare marinade first and marinate beef for 30 minutes in
refrigerator.

Chop up green bell pepper and onion while beef is marinating.

Prepare teryaki sauce while beef is marinating.

Fry meat and vegetables together when marinating is completed.

Cut meat into 1/2 inch by 1 1/2 inch pieces.

Cook fettuccini pasta.

Serving
Place desired amount of pasta on a plate.

Place desired amount of beef on top of the pasta.

Pour desired amount of teryaki sauce on top of the meat and pasta.
